功夫茶用什么茶葉口感好?
一般福建安溪的鐵觀音為上選,最好是用泉水泡制,口感更佳。功夫茶所用的茶葉,只限于半發(fā)醇的福建巖茶,溪茶和潮汕的鳳凰水仙一類(均屬青茶類)。中國的其它茶類如紅茶,綠茶,磚茶,或花茶,白茶等則不適合。因為若用功夫茶的沖法,往往苦澀不堪入口,只有這種半發(fā)醇的青茶類為上。習慣上功夫茶最好是用福建的烏龍茶,即閩北武夷山的巖茶和閩南的溪茶。烏龍茶是個總名,其中的暑茶是閩北所產(chǎn)。鐵觀音則主要產(chǎn)于閩南安溪,故又稱溪茶。巖茶和溪茶名目繁多,其中奇種,單叢,名叢大紅袍,水仙,一枝春等都是名茶?!鄙堑镍P凰山也生產(chǎn)茶葉,也屬半發(fā)醇的青茶,也是功夫茶的用茶。其名目有水仙(俗稱鳥嘴茶),單叢,浪菜等;上引丘逢甲詩的鷦嘴便是鳥嘴茶。鳳凰茶也是我國的名茶之一。
功夫茶的泡法及飲法
1.備具:壺、公道杯、品茗杯、聞香杯放在茶盤上,茶道、茶樣罐放在茶盤左側,燒水壺放在茶盤右側。
2.賞茶:打開茶樣罐,讓來客欣賞茶葉的色和形。
3.燙杯熱罐:將開水倒入水壺中,然后將水倒入公道杯,接著倒入品茗杯中。
4.投茶:按1:18的比例把茶放入壺中。5.洗茶:右手提壺加水,用左手拿蓋刮去泡沫,左手將蓋蓋好,將茶水倒入聞香杯中。
6.第一泡:將開水加入壺中,泡一分鐘,趁機洗杯,將水倒掉,右手拿壺將茶水倒入公道杯中,再從公道杯斟入聞香杯,只斟七分滿。
7.鯉魚跳龍門:用右手將品茗杯反過來蓋在聞香杯上,右手大拇指放在品茗杯杯底上,食指放在聞香杯杯底,翻轉(zhuǎn)一圈。
8.游山玩水:左手扶住品茗杯杯底,右手將聞香杯從品茗杯中提起,并沿杯口轉(zhuǎn)一圈。
9.喜聞幽香:將聞香杯放在左手掌,杯口朝下,旋轉(zhuǎn)90度,杯口對著自己,用大拇指捂著杯口,放在鼻子下方,細聞幽香。
10.品啜甘茗:三個口是一個品,要做三口喝,仔細品嘗,探知茶中甘味。
11.第二泡、第三泡:操作同上。
